time to eat!...

perfect single fry french fries...with a little salty ketchup...

ok...the beer soaked kielbasa?...pork and bacon??...with the kraut???...a little spicy mustard...on the publix potato roll????...please...

the potato roll??!!!...soooo soft and doughy...just soaks up allllll the beautiful juices!!

the origin of golf...

In one form or another, the variant games of present day golf were clearly enjoyed throughout Europe in the Middle Ages. The game persisted over the centuries and the form that it took and rules that were applied varied as widely as the terrain the game was played over. In short, the game consisted of knocking a ball from one pre-designated place to another where the ball was to be struck off a predetermined object in the least number of blows. Games often extended from village to village.

Every individual who has made a living out of hitting a golf ball should hold April 20th 1851 as the nativity for that was the birth date of Young Tom Morris, one of the game's greatest early exponents. Similarly, every green-keeper, designer or administrator should express some word of gratitude on the 1st of July for it was on that day in 1851 that Old Tom Morris left for Prestwick to create the first purpose built golf course on the links of Monkton parish.

It was in 1860 that the first Open Championship was held at Prestwick and was contested by eight leading professionals. The first winner was Willie Park for which he received a red Morocco leather belt with silver clasps as the first prize. The Open continued to be held at Prestwick for 11 years and the Morris's dominated the early events. Old Tom had won the event four times by 1867 and Young Tom subsequently completed a quartet of wins, after which he was allowed to keep the Belt.

out of the oven...tartine french country bread...perfection now...ya know i like to post pictures of all the action in the kitchen...
on the menu tonite...B.L.T.'S and homemade potato chips...we looove our potato chips...with of course the house french onion dip...simple dinner right?...WRONG..frank has been working on the tartine french country loaves since january 11th!!!...finally...today it all comes to fruition...in the form of the ultimate B.L.T...homemade bread...lettuce and tomato from the garden and THICK CUT BACON!!!

followed the recipe to a tee...20 grams of salt... dilute salt in water... add your levain to your wheat and white flour....

puffer fish gave me attitude... came across a massive school of jelly fish!!..there were 100's of them..
there are alot of cupcake stores out there...but you have to stop in at this great new shop on US 41 (across from naples community hospital) called "simply cupcakes of naples"...it's a bright...inviting place... and leah, one of the owners... was as sweet and delightful as her cupcakes!!...

being from minnesota originally you know we love brats!...tonite on the menu we are making homemade brats stuffed with sauerkraut...onion...and a dash of yellow mustard!! on the side...homemade potato chips and the house special french onion dip!

ingredients for brats...fresh ground pork...garlic powder...nutmeg...mace...caraway...fresh ginger..kosher salt...pepper...dried m...
planning a beautiful (florida) winter day at the BEACH today...a crazy front came through...a little chilly the first hour...thereafter...another perfect...clear...sunny day at the beach in naples!!

a little breezy...not complaining!....that's beautiful beach sand NOT snow.... he's trying to keep warm too! c...
on the menu tonite...florida seafood cioppino with homemade sourdough rolls that would rival san francisco's sourdough flavor...all the seafood in this cioppino is from the beautiful florida coast...(with the exception of the tilapia)...

shrimp shells for the cioppino broth... add celery...onions...carrots...bay leaf...peppercorns and water...simmer for 2 hours...
tonite on the menu...pizza!...come oooon...a cold front came through this morning...ya know pizza and pasta are my comfort food...tonite we are making a pizza we haven't made in a long time...a covered pizza...made with homemade pizza dough with a sourdough starter...

ingredients...smoked turkey sausage...garlic...green olives...onions...green pepper...mozzarella cheese...homemade red sauce sourd...
ok...for all you chad robertson fans who can't get enough of this bread...this is what i'm sayin'...here at jewels...we TRIPLED the french country bread recipe!!!...OH YES WE DID!!...the bigger the loaf...the bigger the sandwich...or in this case...the bigger piece of peanut butter toast!!!...

so...this is the preferment after the salt addition...then... the stretch and fold... after the 3 hour preferment...a li...
