aaaaaahhhhhh...jerk smoked country ribs...mashed potatoes...jerk gravy...AND a VERY generous pour of pinot grigio...clear enough??...



ok...paint those country ribs with the jerk!!...a nice double coat!!...

in your zip loc...to the fridge for a few hours...


time to get the smoker smokin'!!...i use oak bark and dried oak leaves...most people don't like to smoke oak with pork...for me...it gives it a subtle...light smoke that i really like...



smoker is smokin'!!!...ribs on!!!...

hey good lookin'...i know what your cookin'!...

after 2 hours...i wrap my ribs in some foil...back on the smoker for another 2 hours!!...

look familiar?:)...you remember how this works?...when the pressure cooker starts hummin'...another 16 minutes...done!

gotta get the gravy goin'...as you can see...there's a few pots on right now...makin' homemade chicken broth!...now for your gravy...flour...oil...2 cups of water...gravy master...and of course...a few overly generous spoonfuls of jerk!!

potatoes done...ribs done...gravy...DONE!!...

TIME TO EAT!!!

now these potatoes are a little different...outside the obvious...the color of the gravy...which i ran out of my gravy master so it doesn't have that dark richness to it :(...but no worries...it was as awesome as ever!...and the other thing that's different...i put buttermilk in them!!...ooooh boy!!...unbelievable!!...a little to much butter...a little butter milk...kosher salt...cracked black pepper...paula deen would be proud!!..the texture is not as fluffy...but i can live with it!!...


please!!..these little beauties were like what they call "burnt ends"!!!...WOW!!...i think because how small they were it just kind of happened!...wonderfully smoked...fabulously jerked!...definitely a looove thing baby!!...

Don't totally get how you make the SAME meal look SOOOOOOO amazing/different every time...yikes, this meal looks FANTASTIC! The pork tenders...please give me a break...I've had your potatoes...sick...but these with the buttermilk...I'm out-a-here...
