ok...what to do with my huge pile of mustard spinach??....here's what i got...COBB CHICKEN!!!...yep!...what is cobb chicken you ask?...well you know what a cobb salad is right?...and ya know how i love my stuffed chicken right?...how about...sauteed spinach topped with tomato and hard boiled eggs...with a chicken breast stuffed with bacon and blue cheese...then topped with fresh avocado?...i like it!!...


ok...here we go...spinach...bacon...avocado...blue cheese...tomatoes...hard boiled eggs...chicken...

STUFFIN'!...a little blue cheese...6 slices of bacon!...


a light dust of flour...in the fridge...


extra virgin olive oil and chopped garlic in the pan...saute for about 6 minutes...

a little water...on medium...lid on...for about 5 minutes...


mustard spinach in the pot...lid on...steam for about 25 minutes...

so i'm waitin' for the cast iron to heat for the chicken...

chicken on...

the last minute...a nice squeeze of fresh lemon...

time to eat...

some of your tomato...your egg...and fresh avocado!...

the spinach...the egg...the fresh tomato!!...

the chicken with the excessive blue...the salty bacon...over the top SAVORY!!!...

really?...cobb salad on steroids with a long putter!!...

Feelin' the love on this meal...WOW, WOW, WOW, WOW...not many words today...it just looks fantastic! Its been said to eat by color...you did it!!! I'd eat this whole color wheel you've got spread groovin'...wow, wow, wow, the last pic is just....WOW - Yum!!! (few more words than I thought...) :) :)
